Wine list is a bit limited in variety.  if you have  4 white wines, 2 (or was it 3?) should not be chardonnays.  Salmon was excellent and beautifully plated with gorgeous, perfectly cooked large shrimp.   Octopus was very good but unable to cut with the provided a knife which lacked any serration so my dad gave up.  Chicken breast is the real disappointment. It is a massive croquette surrounded by a cold sauce.  It was dry and not much flavor and I  actually struggled to swallow it.   Replaced it with a filet  mignon which was very good quality but arrived rare, cold center not medium rare, “very pink, not red”  as I requested.  By the time they refired it, it was 15 minutes later and my partners were long finished with their meals.  It came back medium.  They were very kind and gave my dad a birthday cake but did not provide cutlery.  They are incredibly attentive but just need a bit of training and coordination.  We found that they were either all hovering or I had difficulty attracting their attention. Figuring out how to serve from the left, checking on refilling wine, small things like that. Also, I don't know who started the Mexican tradition of covering each plate in a pool of sauce but while it may photograph well, it does not add to the meal.  Sauce is to flavor, not to swallow the plate.  This was during World Cup and so there were natural distractions but the restaurant was pretty much empty on a Monday night so I was puzzled as to why it took 15 minutes to refire my steak.  Overall I see a lot of potential with Sello but some things need a bit of tightening up before I would put it on my list of "definitely want to go back".
